Carbon steel knife care guide:
Carbon steel knives should be wipe dry when they are washed. A light oiling with some vegetable oil is good but optional. Once a patina has developed the knife will be much more resistant to rust and spotting.
Carbon steel is fairly easy to sharpen. The preferred method is a whetstone. A inexpensive one should do just fine. Those quick sharpener may not work too well so its important to work slowly and check on the blade if you are using those type of sharpener. The angle should be around 25 for meat cleaver and thick spine knives and 15-20 for all other knives.
